Enjoy a Korean beef wrap

This week, we are preparing a very simple Korean recipe consisting of stir-fried beef wraps and steamed rice.

STIR-FRIED BEEF WRAPS WITH STEAMED RICE

Ingredients

2 pounds beef rib eye

2 tablespoons sesame oil

2 tablespoons chopped garlic

1 tablespoon grated fresh ginger

1⁄2 cup rice wine

1⁄2 cup low sodium soy sauce, divided use

1 teaspoon Sriracha Asian hot sauce

2 tablespoons sugar

1 cup chopped bell pepper

1⁄2 cup chopped green onions

1⁄2 cup chopped cilantro

2 cups short-grain rice (cooked according to package directions)

1 head butter lettuce

Putting it together

Heat a large sauté pan over medium heat. Slice the rib eye into really thin slices. Add the sesame oil and beef slices to the hot pan and cook for about three minutes. Add the garlic and ginger and cook for about two minutes. Add the rice wine and cook until the liquid is almost gone.

Add 1⁄4 cup soy sauce and the hot sauce and bring the mixture to a boil. Add the sugar and bell peppers and cook until sauce is thickened. Add the other 1⁄4 cup of soy sauce along with the green onions and cilantro; reduce heat to low and cook for about three minutes.

To serve, add some rice to each plate. Grab a leaf or two of the lettuce, add some of the stir-fried beef and wrap it in the lettuce like a taco. Eat immediately to keep the lettuce from wilting and enjoy.
