Seafood pasta is a snap to make
This week, we are preparing a very tasty Cajun seafood pasta. You may use any type of seafood you prefer in this recipe.
CAJUN SEAFOOD PASTA
Ingredients
3 tablespoons olive oil
1 cup chopped onion
2 tablespoons chopped garlic
1⁄2 cup chopped celery
1⁄2 cup chopped bell pepper
1 cup white wine
3 tablespoons Cajun seasoning
1⁄2 pound peeled and deveined shrimp
1⁄2 pound crabmeat
1⁄2 pound scallops
1⁄2 pound squid
1 cup clams
1 cup clam juice
1⁄2 cup butter (1 stick)
3 pounds linguini pasta, cooked according to package instructions
1 cup chopped tomato
1⁄2 cup chopped cilantro
Salt and pepper, to taste
Putting it together
In a very large pan over high heat, add the oil and the onion and cook for about two minutes. Add the garlic, celery and chopped bell pepper and cook for two more minutes. Add the wine and cook until most of the liquid evaporates. Add the Cajun seasoning along with the seafood and clam juice and bring to a boil. Add the butter and pasta and cook for one minute.
Remove from heat and add the tomato and cilantro and stir until well combined. Adjust the seasoning with some salt and pepper, to taste, and serve while still hot topped with some grated Parmesan cheese and some bread. Enjoy.
