Enjoy simple short ribs
This week, I am sharing a very simple recipe for braised beef short ribs.
BRAISED BEEF SHORT RIBS
Ingredients
3 tablespoons olive oil
2 to 3 pounds beef short ribs
1 cup chopped onion
1⁄2 cup chopped celery
1⁄2 cup chopped carrots
2 cups red wine
2 cups dark beer
1 tablespoon chopped garlic
1 teaspoon chopped rosemary
1 teaspoon chopped thyme
1 cup parsnips, cut into cubes
1 cup turnips, cut into cubes
2 cups red potatoes, cut into cubes
1 cup tomato puree
Salt and pepper, to taste
Preparation
In a very large, heavy-bottomed, oven-safe pot over high heat, add the oil and the ribs and brown them on all sides. Remove the ribs from the pot and set aside. Add the onion, celery and carrots and cook until golden brown, about three minutes.
Return the ribs to the pot along with the wine and beer and bring to a boil. Turn the heat to low and simmer, covered, for about 30 minutes. Add the remaining ingredients, cover and place in the oven preheated to 350 degrees and cook for about two hours.
Adjust seasoning, as needed, as well as water or beef stock, if needed, to obtain the desired consistency in the sauce.
Serve the ribs as is or over some egg noodles and enjoy.
