Try a unique autumn soup
This week, we are preparing tasty fall soup that I am sure you will enjoy.
PUMPKIN AND PORK SOUP
Ingredients
4 tablespoons vegetable oil
1 pound pork shoulder, cubed
1 cup chopped onion
1⁄2 cup chopped carrot
1⁄2 cup chopped celery
3 cups pumpkin, cubed and peeled
1 teaspoon cumin
4 cups vegetable broth
Salt and cayenne pepper, to taste
For garnish: roasted peanuts, chopped cilantro
Putting it together
Heat the oil in a large pot over high heat and brown the pork until golden on all sides. Add the onion, carrot and celery and cook for about five minutes. Add the pumpkin and cook for about a minute, then add the remaining ingredients except for garnish.
Bring the soup to a boil, then reduce heat to low and simmer for about 30 minutes, or until the pumpkin begins to fall apart. Top each serving with some peanuts and cilantro and enjoy.
