Enjoy tasty Thai green curry shrimp
This week, we are preparing a very simple and tasty Thai green curry.
THAI GREEN CURRY SHRIMP
Ingredients
2 tablespoons sesame oil
1 cup chopped onion
1 tablespoon chopped garlic
1 tablespoon grated fresh ginger
1 teaspoon chopped Thai green pepper
1 cup sliced mushrooms
2 cups coconut milk
2 pounds shrimp, peeled and deveined
1 cup chopped spinach
2 tablespoons toasted sesame seeds
1⁄2 cup chopped cilantro
1⁄2 cup chopped tomato
1⁄2 cup chopped green onions
1 tablespoon lime juice
Steamed jasmine rice, for serving
Putting it together
This is a very simple dish to prepare. All that really matters is adding the ingredients in the right order. Start by adding the sesame oil to a large pan over high heat. Add the onion, garlic and ginger and cook for about one minute. Add the pepper and mushrooms and cook for about three minutes. Add the coconut milk and bring it to a boil.
Add the shrimp and cook until the shrimp is almost done, then turn the heat to low and add the remaining ingredients except for the rice. Add salt and pepper, to taste. Stir the curry and then let it rest in the pan with the heat off for about five minutes before serving, to allow the shrimp time to finish cooking and the flavors to develop.
Serve the curry with a nice helping of the steamed rice and enjoy.
